I made us Italian Stuffed Zucchini Boats for dinner. They were filled with a ground beef, tomato and mozzarella that was amazing. I served it with another scoop of the Extra Filling and three Baby Bell Peppers. The girls even said that the zucchini boats “weren’t as bad as some of the vegetables” we make them eat. So, I’ll take that as a win!

Mediterranean Chicken & Rice Bowls
We had our-of-town family stop over for dinner tonight. We shipped together a batch of Quick Cooker Mediterranean Chicken & Rice Bowls. I helped make it during Pampered Chef training, but this was the first time cooking it at home. My family was impressed, and so was I. Only 19 minutes in the Quick Cooker, and it was time to eat.
Breakfast Casserole for Linner
I think we originally planned on having this for brunch, but it took us longer to get going than we wanted. So it transformed into Breakfast for Linner. Our Casserole has hash browns, sausage, onions, sour cream, cream of mushroom soup, eggs and shredded cheese. It’s a family recipe we’ve been making since shortly after we were married, and it was tasty as ever!
Barbecue Chicken Sandwich & Fries
After a very productive parallel-parking training session, we stopped by Wendy’s on the way home. Yes, that training can wear you out as both the driver and the trainer. I ordered their new Made To Crave Barbecue Chicken Combo with Fries and a Frosty! It was a little spicier than some in the family would prefer, but I thought it was tasty.
Sunday Night Roast
Tonight we made a Quick Cooker Pot Roast with Mashed Potatoes, and it turned out perfectly! The roast was fall-apart tender. The mashed potatoes were creamy, garlic and buttery. The carrots we tender. And, it was all done in 45 minutes.
Chicken, Sausage and Veggie Sauté
We whipped up a simple and tasty dinner tonight. Grilled Chicken Breast Strips and Italian Sausage Sautéed with Red Bell Peppers and Onions. Then, I served it with a Side Salad with Chunky Guacamole, Salsa and Sour Cream.
Spaghetti Night
Jennifer and Sophie made us their famous Spaghetti Dinner. It was tasty and just enough carbs to make me want to drift off into my slumber a little earlier than I’ve been hitting the sack.
Graduation Teppanyaki
I had Teppanyaki Combo of Filet Mignon and Lobster with Noodles, Fried Rice, Veggies, soup and salad with a Koto Japanese version of Long Island Iced Tea to wash it down. It was a great day celebrating Morgan’s accomplishment.
Taco Bar
We had family drive here from Michigan today, and I wanted to have something close to ready when they arrived after their long drive. I used many of my favorite Pampered Chef tools to pull off our Taco Bar Feast.
Quick Cooker Salsa Chicken
Tonight, we made Quick Cooker Salsa Chicken and added fresh veggie slices to go with it. It was easy to make and very tasty to eat!
