We followed the recipe for Skillet Dijon Chicken & Mushrooms with Asparagus expect we had more chicken than the one pound it called for. It was tasty, but we may add a few more spices to the chicken, and the sauce didn’t thicken as much as it showed in the recipe. We might add a bit of corn starch next time.

We made Garlic-Rosemary Chicken Drumsticks and a side of Maple-Glazed Brussels Sprouts with Bacon. Jennifer handled the Brussels Sprouts, and I took care of the chicken. We thought it was tasty, but the next time we try it, I think we’ll tweak the recipe just a touch to make it “our own” as they say on cooking competition shows.

Grilled Chicken Breast with Greek Salad

We crafted Grilled Chicken Breast with Greek Salad from a recipe we found. The recipe called for adding Italian seasoning to the chicken before grilling, but, since we were having a nice Greek Salad to go with it, we chose to season them with our Pampered Chef Greek Rub, and BOTH daughters loved it!

Quick Cooker Jambalaya

This Pampered Chef Quick Cooker version of jambalaya only took about 30 minutes to make. It includes chicken sausage, chicken breast and long-grain rice for main ingredients with veggies and spices as side kicks. It turned out better than I imagined! We will be making this again!
