We had a leftover Night, and I made me a couple Taco Quesadillas with the taco meat, cheese and tortillas.

Taco Bar
We had family drive here from Michigan today, and I wanted to have something close to ready when they arrived after their long drive. I used many of my favorite Pampered Chef tools to pull off our Taco Bar Feast.
Mini Chicken Tacos
Morgan made Mini Chicken Tacos, and I washed mine down with some ice-cold water and a coke while we watched Small Foot.
Qdoba at Purdue
Morgan and I went to a dinner at Purdue Polytechnic Institute with some of the staff. I was very excited to hear about her opportunities (and I think she was, too!). They served us a spread from Qdoba, and it was tasty.
Mini Tacos with Brazi Bites
I made us a batch of Mini Tacos with Brazi Bites, which are Brazilian Cheese Bread balls. It was enough to ward off any hunger pains before we watched the big battle on Game of Thrones.
Mexican Night II
Sophie chose the Mexican theme for tonight and made Mini Tacos, Jennifer tried a new recipe for Cheesy Chicken Enchiladas, and I made Mexican Fried “Rice.” A little late to the game, Morgan made her versions of Cheese Tostadas, which were like her famous cheese quesadillas but open faced.
Mexican Night
Our family had its third dinner themed night of the year, and we fully enjoyed Mexican night. I was the master chef for the feast that featured Steamed Tamales, Mini Chicken Tacos, Chips with Queso Dip and Cheese Quesadillas.
Taco Lettuce Wraps
Jennifer mixed the spices and even pressed the garlic before adding it to the diced onion and burger sautéed in coconut oil. I was in charge of scrubbing and preparing the green onions, cherry tomatoes as well as shredding the cheddar cheese. We didn’t have the Boston lettuce the recipe called for, so I prepared romaine hearts in their place. For the ones that were extra small, I chopped them into a bowl in case anyone only wanted a taco salad instead of the taco wraps.
