Nachos and Tacos

Tonight we had takeout from a local Mexican restaurant. They got the 60% of the order wrong, but what we did receive was very tasty. We had amazing Super Nachos with Marinated Pork and Tacos with Rice and Beans. Nice meal with great company.

Rice & Beans

I made myself some Rice & Beans for dinner. I used some leftover rice and a can of pork and beans. A couple minutes in the microwave, and my dinner was ready. Maybe I’ll be more creative tomorrow.

Home-cooked meal at last!

Boy is it good to be home! For dinner, I cooked a Mediterranean Chicken & Rice Bowl in my Quick Cooker. We didn’t have the cucumber or tomatoes, but it was a fast and easy meal. The best part was that there was enough to have leftovers for lunch tomorrow!

Mediterranean Chicken & Rice Bowls

We had our-of-town family stop over for dinner tonight. We shipped together a batch of Quick Cooker Mediterranean Chicken & Rice Bowls. I helped make it during Pampered Chef training, but this was the first time cooking it at home. My family was impressed, and so was I. Only 19 minutes in the Quick Cooker, and it was time to eat.

Leftover time!

We cleared out the fridge by packing away some leftovers. I chose the Chicken Stir Fry with Rice. I still love my Round Covered Baker for leftovers. Food doesn’t get dried out in the microwave.

Thai Style Ginger Chicken

Morgan cooked us up some Thai Style Ginger Chicken for dinner tonight. She opened the frozen Stouffer’s bag and dumped it into our Wok. Before we knew it, viola! Dinner was served. This may be one of my favorite Frozen bag meals yet.

Teriyaki Chicken Stir Fry

Morgan whipped up a batch of Chicken Stir Fly using a frozen bag of Stir Fry Vegetables and a bag of Grilled Chicken Strips I picked up at Costco. She tossed everything in our Stainless Steel Nonstick Wok, and I added some Pampered Chef Teriyaki Sauce with Honey. I also made a batch Jasmine Rice in our Quick Cooker. It was a nice meal.

Father’s Day out

We started with a Fried Cauliflower starter, and for my entree, our waitress, Tiffany, suggested the Chicken Stir Fry, and I went for it. My side was Fried Mushrooms, and I don’t remember having any better … except when my brother sautéed some morels in butter.

Panda Express After Our Drive

After driving home from Michigan, we were too tired to cook, but too hungry to just go to bed. So, Morgan and I took a run to Panda Express before they closed. I had Fried Rice, Kung Pao Chicken and Orange Chicken with a Spring Roll and Crab Rangoon.

Graduation Teppanyaki

I had Teppanyaki Combo of Filet Mignon and Lobster with Noodles, Fried Rice, Veggies, soup and salad with a Koto Japanese version of Long Island Iced Tea to wash it down. It was a great day celebrating Morgan’s accomplishment.
