Jennifer saved the day be whipping up spaghetti with her special meat sauce. It was ready as I pulled into the neighborhood. I fully enjoyed the meal.
Garlic-Rosemary Chicken Drumsticks with Maple-Glazed Brussels Sprouts and Bacon
We made Garlic-Rosemary Chicken Drumsticks and a side of Maple-Glazed Brussels Sprouts with Bacon. Jennifer handled the Brussels Sprouts, and I took care of the chicken. We thought it was tasty, but the next time we try it, I think we’ll tweak the recipe just a touch to make it “our own” as they say on cooking competition shows.
Quick Cooker BBQ Ribs
For dinner tonight, I made BBQ Ribs in our Quick Cooker and had macaroni salad and potato salad on the side with a sprinkle of paprika. Once the ribs were done, I topped them with a little extra sauce and broiled them for about 5 minutes to give them just the right amount of glaze. They were yummy to my tummy!
Paddy’s Day Dinner
We celebrated Saint Patrick’s Day with a home-cooked Corned Beef and Cabbage dinner. I tweaked a Pampered Chef recipe to make it in our Quick Cooker. Done in about 2 hours.
Family Dinner & Movie Might
Tonight’s family dinner featured Costco-sized hotdogs, Broccoli and Mac ‘N Cheese. The comfort food paired well with our family movie night of Christopher Robin. Nice, relaxing Saturday.
Friday night dash
We ordered a Door Dash delivery from Aspen Creek, and it was great! I enjoyed a medium rare ribeye, mashed potatoes and broccoli. It was a very welcome end to a busier-than-normal Friday.
Grilled Chicken Breast with Greek Salad
We crafted Grilled Chicken Breast with Greek Salad from a recipe we found. The recipe called for adding Italian seasoning to the chicken before grilling, but, since we were having a nice Greek Salad to go with it, we chose to season them with our Pampered Chef Greek Rub, and BOTH daughters loved it!
Quick Cooker Pot Roast with Mashed Potatoes
We had a Pampered Chef recipe, Quick Cooker with Pot Roast with Mashed Potatoes. In about 30 minutes, the very juicy and perfectly tender potatoes we ready to eat. It’s hard for me to remember having such a juicy roast!

We made Crispy Chicken with Cauliflower Rice Pilaf and Fresh Greens. First I pan fried lightly seasoned drumsticks in butter for a few minutes on each side. Then, I put the pan in the oven to cook them fully.

I was very thankful for Jennifer making dinner early tonight so I could enjoy the meal before going to my meeting. She made Pan-Fried Pork Chops with Maple-Roasted Acorn Squash, and it was amazing!
