Tilapia with Baked Broccoli

For dinner tonight, I baked Tilapia two way … Tortilla Crusted and Planko Crusted. I served it with Baked Broccoli, Bacon and Mushrooms.

Sweet Potato Soup

I made Sweet Potato Soup in my Deluxe Cooking Blender for the first time, but it will NOT be the last! So fast, easy and yummy! I served it with Buttermilk Biscuits.

Ribs, Chicken, Corn & Rice

For dinner tonight, I had a Baby Back Ribs, Cheesy Bacon BBQ Chicken with Roasted Street Corn, Mexican Rice, Chile-Garlic Toast & Garlic Dill Pickles. And, I washed it down with a nice cold Yuengling Light! It was just when the doctor ordered after surviving the first full workweek of the new year!

Flank Steak Tacos

We finally made Flank Steak Tacos, and it was a team effort! I worked the Meat, the Heat and the Retreat (also known as a Crema) to give just enough relief from the heat of the sauce. Jennifer took care of the Slaw, which added a flavorful crunch to the tacos. And, the girls served as our sous chefs and were a big help getting dinner done.

2020’s First Mac ’N Cheese

Morgan was making dinner when I made it home from work. She made our first Mac ‘N Cheese dinner of the New Year. It was accompanied by Mini Corndogs and Mixed Vegetables.

Pasta Tuesday

We made a Chicken, Artichoke and Sun-Dried Tomatoes Pesto Pasta, our take on a Pampered Chef recipe. I enjoyed it very much!

Bacon Two Ways

For dinner, I made Bacon two ways. First, I wrapped it around Boneless Skinless Thighs. Then, I chopped some up to mix in with our Roasted Brussels Sprouts.

First 2020 Leftovers

For dinner, I had leftovers. Lasagna with Mixed Vegetables. No sense letting them go to waste!

Teriyaki Meatballs with Rice

Tonight, we whipped up our first dinner of the New Year. We made Teriyaki Meatballs and Rice in our Quick Cooker with Peas and Carrots in our 2-qt. Quart Micro-Cooker. I washed it down with a glass of Prosecco.

Asparagus-Stuffed Chicken

The girls had their feast nearly done when I made it home from work. They served us Asparagus-Stuffed Chicken Breast, Peas & Carrots, Stuffing and Cranberry Sauce for dinner.
