For dinner tonight, we made Shepherd’s Pie, but we were a little low on potatoes so we added cauliflower to it and added a package of Scalloped Potatoes. I also added a packet of Enrichables Pea Protein to the potatoes and a packet the Kale & Fiber to the meat sauce. It was yummy!

Fried Chicken, Mashed Potatoes & Salad
Tonight was like a “fend for yourself” night for dinner, but we each had a single-serving meal. Mine was Fried Chicken Breast with Mashed Potatoes with Gravy and a Country Ranch Salad.
Chili Lime Baked Chicken
For dinner tonight, I made Chili Lime Baked Chicken. Morgan made us Parmesan Couscous and Steamed Broccoli.
Fried Chicken & Brussels Sprouts
Jennifer made some amazing roasted Brussels Sprouts, and I put some Chicken in the Deluxe Air Fryer. It was a tasty meal I really enjoyed.
Chicken Alfredo with Salad
Morgan made dinner tonight. Chicken Alfredo accompanied by a Country Ranch Salad. They both were yummy.

Thanks GrubHub for brining is dinner tonight. I wasn’t feeling well enough to cook. I had General’s Chicken over Fried Rice with Pot Stickers and Crab Rangoons.
Spinach & Artichoke Chicken Rolls
Jennifer found another new recipe for dinner tonight, and it was a hit! We made a few tweaks to the Spinach & Artichoke Chicken Rolls. We didn’t have any mozzarella, and we split the three chicken breasts we had in half to give us six rolls. We made more of the filling than would fit into the chicken, but we turned it into a Spinach & Artichoke Dip appetizer. I also browned the rolls in our Cast Iron Skillet before cooking them our Deluxe Air Fryer. We served Roasted Veggies that had a nice crust on the outside with deliciously soft and tasty inside.
Grilled Chicken Wraps
We had two tortillas, and I used them with some leftover Rotisserie Chicken, Spinach and Raspberry Habanero Sauce. I grilled them on our Nonstick Grill Pan and Press.
Quick Cooker Risotto
I whipped up a batch of Quick Cooker Risotto, but I wouldn’t have happened without my family’s assistance.
Rotisserie Chicken with Asparagus & Mashed Potatoes
I tried to stack some Chicken Thighs on our rotisserie spit, and they edges came out just as expected! Unfortunately, the inside was not quite up to temperature. So, I stuck them in our Deep Covered Baker and popped them in the microwave. After 5 minutes, the chicken was fully cooked, juicy and still had its crispy skin. I served it with Air Fryer Roasted Asparagus and Mashed Potatoes.
