I tried making a Rotisserie Pork Loin in my Deluxe Air Fryer for the first time, and I think I may have cooked it a little too long. I was a little bummed because I was looking forward to the juicy goodness from other roasts I cooked in it. It still had good flavor. We served it with Quick Cooker Mashed Potatoes and Sautéed Garlic and Spinach.

Mediterranean Chicken & Rice Bowls
We made one of our favorite Pampered Chef recipes, Mediterranean Chicken & Rice Bowls. We made a few variations on the recipe. Jennifer preferred to dice the onion and cucumber with a knife instead of using our super tools like the Food Chopper and Quick Slice. We also didn’t have fresh parsley, so I added some sprinkles of dried parsley to the hummus and lemon juice, and it was very tasty. I also added a few handfuls of fresh spinach to the Quick Cooker after it looked like it needed more.
Chicken, Sun-Dried Tomato, Spinach & Asparagus Risotto
For dinner, we made our own take on a Pampered Chef recipe, Easy No-Stir Risotto. We added Asparagus to the Chicken Sun-Dried Tomato & Spinach recipe in our Rockcrok Everyday Pan. Morgan made a great salad to go with it which included Tomatoes, Cucumbers, Avocado, Feta and Sliced Radishes. Great overall meal!
Chicken, Sun-Dried Tomato & Spinach Risotto
For dinner, I made another Pampered Chef recipe, Easy No-Stir Risotto, in our Rockcrok Everyday Pan. We made was Chicken Sun-Dried Tomato & Spinach version. Our Chicken was still frozen, but we cooked it in the Quick Cooker while the Risotto was in the microwave. It was a hit!
Easy Tortellini Toss
Morgan is our usual Tortellini master, but we had her try a new recipe tonight where she and Sophie made cheesy sauce from scratch! The Pampered Chef recipe is for Easy Tortellini Toss, and it’s all cooked in the microwave using our Deep Covered Baker. I diced the Ham Steak, but they did everything else in their own including adding the Spinach.
Home-cooked meal at last!
Boy is it good to be home! For dinner, I cooked a Mediterranean Chicken & Rice Bowl in my Quick Cooker. We didn’t have the cucumber or tomatoes, but it was a fast and easy meal. The best part was that there was enough to have leftovers for lunch tomorrow!
Team Time Owl Sampler
After a day of focused planning at a work offsite, we had dinner as a team at the Blind Owl Brewery. I ordered the Owl Sampler, which included a Pretzel, 2 Chipotle Wings, 2 Chicken Fingers, and Spinach Artichoke Dip with Chips, and I enjoyed washing it down with a Earthberry Shake.
Mediterranean Chicken & Rice Bowls
We had our-of-town family stop over for dinner tonight. We shipped together a batch of Quick Cooker Mediterranean Chicken & Rice Bowls. I helped make it during Pampered Chef training, but this was the first time cooking it at home. My family was impressed, and so was I. Only 19 minutes in the Quick Cooker, and it was time to eat.
Celebrating 16
We went to Olive Garden for dinner so Sophie could get her long-awaited Strawberry-Banana Smoothie. We scarfed on the Salad and Breadsticks like they were bottomless, and the Spinach-Artichoke Dip was just as good as we remembered. I chose the Chicken and Shrimp Carbonara for my entree, and it was amazing! We didn’t even have room for dessert!
