Braised Chicken

I made Braised Chicken in our new Enameled Cast Iron Dutch Oven for dinner. It was a Pampered Chef recipe that I’ve been wanting to make since I received it. Sophie made her famous Quick Cooker Mashed Potatoes. And, neither dish disappointed me.

Creamy Mushroom & Spinach Pasta with Chicken

Tonight, I mashed a few different recipes together for dinner tonight. I’ll call this recipe Creamy Mushroom & Spinach Pasta with Chicken. I sliced the Baby Bella Mushrooms with my Quick Slice and cut the chicken tenders on my Large Cutting Mat with my Chef’s Knife. I sautéed them in our Quick Cooker. Then, I added broth, Three Onion Rub, a can of Cream of Mushroom Soup, pasta and a bit of flour. In 8 minutes, I added some cream cheese, and dinner was ready. It was a hit.

Homemade Curry Over Rice

We found a recipe online for Vegetable Curry, but I don’t think you can still call it that if you add chicken. We made it in our Non-Stick Stainless Steel Wok and served it over Basmati Rice made in our Quick Cooker. I enjoyed the meal.

Creamy Mushroom Chicken

For dinner tonight, we made Creamy Mushroom Chicken in our Quick Cooker and Roasted Potatoes in our Deluxe Air Fryer. I enjoyed it even if it didn’t have any glutens or dairy.

Taco in a Bowl

We whipped up another new recipe in our Nonstick Stainless Steel Wok tonight, Taco in a Bowl, and I loved it! The recipe says it’s even “Keto Friendly” if you’re into that kind of thing. I just know that one helping filled me up, and it was tasty!

Tomato and Spinach Risotto with Chicken

I found a recipe online and gave it a go for dinner. With Morgan as tonight’s Sous Chef, I made Tomato and Spinach Risotto with Chicken in our Quick Cooker. The recipe didn’t call for chicken, but I had a craving and added a few frozen tenders. I received a thumbs up from everyone.

Contactless Pizza Delivery

To celebrate the end of a long week for me and the end of the school year for Sophie, we ordered Domino’s delivery. I had a slice of Pepperoni & Pineapple Pizza, a slice of Mushroom, Onion and Pepper Pizza, Half a Mediterranean Veggie Sandwich, a few Garlic Bread Knots and some BBQ wings.

Spinach & Artichoke Chicken Rolls

Jennifer found another new recipe for dinner tonight, and it was a hit! We made a few tweaks to the Spinach & Artichoke Chicken Rolls. We didn’t have any mozzarella, and we split the three chicken breasts we had in half to give us six rolls. We made more of the filling than would fit into the chicken, but we turned it into a Spinach & Artichoke Dip appetizer. I also browned the rolls in our Cast Iron Skillet before cooking them our Deluxe Air Fryer. We served Roasted Veggies that had a nice crust on the outside with deliciously soft and tasty inside.

Fried Pork Tenderloin

I tried out our new Butcher’s Twine for the first time tonight. I used it to tie up a Pork Tenderloin to the rotisserie spit, and it worked like a charm! The meat had a nice crisp on the outside and juicy goodness on the inside. Sophie sautéed some Fresh Spinach, and Morgan made a Pasta Salad with Cucumbers, Tomatoes and Artichokes.
