Southern Fried Chicken

I ate Southern Fried Chicken with Mashed Potatoes covered in White Gravy, a couple Buttermilk Biscuits and a serving of Kale and Brussels Sprouts Salad. I also enjoyed a Spring Berry Iced Tea. I was a little disappointed that I was too full to finish everything. Oh well, that’s another lunch to take to the office!

Easter Dinner

We made Costco-seasoned Ribs, Asparagus and Mashed Potatoes with a Salad. I was planning on making Easter Cookies, but since it was so nice and sunny today, we did a little work around the house while dinner was cooking. Then, the oxygen rushed to my stomach to help digest my meal leaving me craving a little relaxation. Happy Easter!

Grilled Chicken Breast with Greek Salad

By the time I made it home, Jennifer had most of the Grilled Chicken Breast with Greek Salad ready. All I needed to do was to grill the marinated chicken, and it was time to break out the forks. It was a great meal!

Planko-Crusted Tilapia with Pasta Salad

For dinner, I baked some Planko-Crusted Tilapia to go with Morgan’s Pasta Salad, which included cucumbers and artichoke hearts. It was another frozen entree from Costco and was pretty tasty. And, that’s no foolin.

Balsamic Grilled Chicken Salad

We enjoyed it so much last time we made it, tonight we had the return of Balsamic Grilled Chicken with Fresh Mozzarella and Avocado Salad. And, it was just as tasty as it was the first time.

Lasagna & Salad

Another late night at work. Thankfully, Jennifer has her lasagna waiting for me when I walked into the house. I added a side salad with Mediterranean Dressing to bump up my veggie count for the day.

Quick Cooker BBQ Ribs

For dinner tonight, I made BBQ Ribs in our Quick Cooker and had macaroni salad and potato salad on the side with a sprinkle of paprika. Once the ribs were done, I topped them with a little extra sauce and broiled them for about 5 minutes to give them just the right amount of glaze. They were yummy to my tummy!

Grilled Chicken Breast with Greek Salad

We crafted Grilled Chicken Breast with Greek Salad from a recipe we found. The recipe called for adding Italian seasoning to the chicken before grilling, but, since we were having a nice Greek Salad to go with it, we chose to season them with our Pampered Chef Greek Rub, and BOTH daughters loved it!
