For dinner, I made some a-MAZE-ing Pork Chops in our Deluxe Air Fryer. Sophie popped a Sweet Potato into the Quick Cooker to steam it. and, Morgan made us a Pasta Salad with cucumbers, grape tomatoes and artichoke hearts. It was a delicious meal.

Enriched Shepherd’s Pie
For dinner tonight, we made Shepherd’s Pie, but we were a little low on potatoes so we added cauliflower to it and added a package of Scalloped Potatoes. I also added a packet of Enrichables Pea Protein to the potatoes and a packet the Kale & Fiber to the meat sauce. It was yummy!
Quick Cooker Risotto
I whipped up a batch of Quick Cooker Risotto, but I wouldn’t have happened without my family’s assistance.
Tamale Night
For dinner tonight, I decided to toss another batch of Tamales into our Quick Cooker. One was a Sonora, which had shredded chicken and green chili, and two smaller ones were Sweet Pumpkin.
Quick Cooker Chicken Teriyaki
We made Chicken Teriyaki in our Quick Cooker. It didn’t go as smoothly as other times, but it still was tasty.
Tamale Tuesday
I steamed some Tamales shipped to us from New Mexico for dinner. They only told 15 minutes in our Quick Cooker. I really enjoyed them.
Homemade Fried Rice
We used up our leftover Roast, Pork Chops and Rice and made a recipe Jennifer found online called “The BEST Fried Rice” … and, it was really good. I think next time we may have to double the recipe.
Homemade Coconut Chicken Curry
For dinner, Jennifer and I tried a new recipe, Coconut Chicken Curry, and it was super tasty. And, the girls even liked it! That’s a definite success.
Pot Roast with Mashed Potatoes
We made Pot Roast and Mashed Potatoes in our Quick Cooker for dinner tonight. Jennifer chopped the onion, carrots and potatoes. And, she used the pan juices to make an amazing Mushroom Gravy. We used homemade chicken broth in the Buttery Garlic Mashed Potatoes cooked in the Ceramic Pot. That is Sophie’s absolutely her favorite way to have them.
Rotisserie Pork Loin
I tried making a Rotisserie Pork Loin in my Deluxe Air Fryer for the first time, and I think I may have cooked it a little too long. I was a little bummed because I was looking forward to the juicy goodness from other roasts I cooked in it. It still had good flavor. We served it with Quick Cooker Mashed Potatoes and Sautéed Garlic and Spinach.
