Rio Grande Nachos

I know the recipe calls it “Rio Grande Dip,” but it was big enough to feed all of us. We turned it into an amazing Rio Grande Nacho dinner. The dip is made in a Rockcrok on the stove and in the oven. It was amazing!

Quick Cooker Oktoberfest

I finally had a chance to make my family the Quick Cooker One-Pot Oktoberfest dinner. I had everything on hand except the BEER! Who would’ve imagined. After a quick trip being chauffeured to the liquor store by my driver-in-training, it was game on! I very much enjoyed the meal, but not everyone was a fan after hearing about how Sausage was made in school. Oh well, more for me!

Risotto Round 2

This was our second time making Quick Cooker Cheddar Broccoli Risotto with Chicken, and I think it was even better this time. Jennifer chopped the veggies and pressed the garlic, Sophie made sure we had just the right amount of broth, Morgan shredded the cheese, and I was chicken chopper and put it all together.

All the Way Little Cheeseburger

To celebrate National Cheeseburger Day, I popped over to Five Guys Burger & Fries to pick up dinner. I had an All the Way Little Cheeseburger and shared Large Fries with the Family. It was just as amazing as I remembered. I also brought home a dish of Peanuts!

Memorial Shepherd’s Pie

I made Shepherd’s Pie. This recipe included ground beef browned with an onion and a couple cloves of garlic, a can of sweet corn, a can of green beans and a can of tomato soup. Don’t tell my family, but I added a packet of our new Enrichables with Kale & Fiber. Added nutrition with no change in taste. I think almost everyone went back for seconds!

Domino’s Delivers

We ordered a feast for dinner. I had a couple slices of Hand Tossed Pizza, half a Mediterranean Veggie Sandwich, a few Parmesan Bread Twists and some Sweet Mango Habanero Wings. I followed that up with a piece of the Marbled Cookie Brownie. If you haven’t had one, you’re missing out!

One-Pot Oktoberfest

Together, our team made Quick Cooker One-Pot Oktoberfest as well as Nacho Cheese Sauce in our Deluxe Cooking Blender. Both had rave reviews and were enjoyed even by the skeptics in the group. I *may* have added more beer than it called for, but the flavors were great. Who would have thought you could perfectly steam quartered potatoes and inch-long pieces of carrots in THREE minutes?

Leftover Meatloaf Spaghetti

I chose to make my own concoction out of two meals that my family wasn’t crazy about the first time around. I took my Hidden Veggie Marinara Spaghetti and added in the leftover Cheese-Stuffed, Bacon-Wrapped Meatloaf. I chopped up the meatloaf and added a can of Roasted Tomatoes and some shakes of Crushed Peppercorn and Garlic Rub. It didn’t turn out too bad if I do say so myself!

Pickup Mistake

After waiting an hour past the time we were told our pickup order would be ready, the food was just OK. We had a Mediterranean Lover’s Salad, a Pear-Fect Pie, Garlic Knots and Cinna-Knots. The pizza had Evoo, gorgonzola, parmesan, all natural chicken, pears, caramelized onions, balsamic glaze, cracked black pepper. It sounded better than it tasted. Oh well, live and learn. I may not visit another My Pie Pizza if there is another option.

Caprese on Ciabatta

I ordered a Caprese at Subway, and the guy behind the counter looked as if he had never heard of such a thing. Then, it was like a lightbulb went on. “Ohhhh … a Cap-rEEce.” I had to giggle. In fact I ordered a second one to see if he would do it again. Yup. Utahn-glish at its finest.
