We made a Pampered Chef recipe, Egg Roll in a Bowl. I forgot to cook the rice, but it was tasty even without it.

Chicken, Sun-Dried Tomato & Spinach Risotto

For dinner, I made another Pampered Chef recipe, Easy No-Stir Risotto, in our Rockcrok Everyday Pan. We made was Chicken Sun-Dried Tomato & Spinach version. Our Chicken was still frozen, but we cooked it in the Quick Cooker while the Risotto was in the microwave. It was a hit!

Welcome Home Spaghetti

Jennifer and Morgan started Spaghetti when Sophie we’re close to home from our road trip, and Sophie chipped in once we unloaded the car. It’s good to be home!

California Grilled Chicken Sandwich

I enjoyed a California Grilled Chicken Sandwich for dinner tonight. It had Applewood Smoked Bacon, Avocado, Swiss Cheese, Lettuce, Tomato, Onion and Garlic Mayo toppings.

Sweet Potato Soup

I made Sweet Potato Soup in my Deluxe Cooking Blender for the first time, but it will NOT be the last! So fast, easy and yummy! I served it with Buttermilk Biscuits.

Flank Steak Tacos

We finally made Flank Steak Tacos, and it was a team effort! I worked the Meat, the Heat and the Retreat (also known as a Crema) to give just enough relief from the heat of the sauce. Jennifer took care of the Slaw, which added a flavorful crunch to the tacos. And, the girls served as our sous chefs and were a big help getting dinner done.

Chicken Pot Pie Chowder

I made another new Pampered Chef recipe, Chicken Pot Pie Chowder. It was pretty quick using the Rockcrok Dutch Oven on the stovetop and in the oven.

Red Lentil & Spinach Soup

We made Red Lentil & Spinach Soup in our Quick Cooker, and I loved it! It wasn’t quite the same as the soup we had in Turkey, but it was close. Some of my family said it was missing something … like MEAT!
