Jambalaya Dinner

For dinner tonight I made Quick Cooker Jambalaya. What else would you make to celebrate Fat Tuesday? It was ready in 40 minutes.

Cheesy Cauliflower & Broccoli Chicken Soup

We tried our own take on a recipe Jennifer found online. One-Pot Cheesy Cauliflower & Broccoli Chicken turned into Cheesy Cauliflower & Broccoli Chicken Soup after a slight mixup of the quantity of certain ingredients. But, it was amazing with great flavor, and I think I prefer it as a soup! We made Red Lobster Cheddar Biscuits to go with it.

Moo Shu Pork Bowls

We made Moo Shu Pork Bowls by modifying a Pampered Chef recipe that had them served in wraps. Jennifer also tried a new recipe for the slaw, and I think we both had a success!

Whopper

Morgan brought us home dinner. I ate a Whopper with Cheese, Fries and a Coke.

Chicken, Sun-Dried Tomato, Spinach & Asparagus Risotto

For dinner, we made our own take on a Pampered Chef recipe, Easy No-Stir Risotto. We added Asparagus to the Chicken Sun-Dried Tomato & Spinach recipe in our Rockcrok Everyday Pan. Morgan made a great salad to go with it which included Tomatoes, Cucumbers, Avocado, Feta and Sliced Radishes. Great overall meal!

Chicken Pot Pie Chowder

Tonight we decided to make a bit of comfort food, Chicken Pot Pie Chowder. Everything was cooked in our Rockcrok Dutch Oven … in the Microwave, on the Stovetop and in the Oven.

Spaghetti with Enrichables

My family made Spaghetti tonight and actually added two packets of Enrichables to it without me asking! One was Kale & Fiber, and the other was Pea Protein.

Roasted Vegetables with Bacon-Wrapped Chicken

We made a family favorite for dinner tonight. We roasted Asparagus, Zucchini, Brussels Sprouts and Cauliflower on our Half Sheet Pan and baked Bacon-Wrapped Chicken Thighs on the Baking Rack. It was as satisfying as always!

Tuesday Night Leftovers

We had leftovers for dinner tonight. I ate White Chicken Chili, Swedish Meatballs and Roasted Vegetables.
