Creamy Cilantro Lime Chicken

We made Easy One Skillet Creamy Cilantro Lime Chicken for dinner and substituted a few of the ingredients for what we had in the house. It was nice seeing us use what we had and making a nice meal, too.

Hope-less Spaghetti

Jennifer and Sophie made Spaghetti for dinner, but Sophie they couldn’t call it High-Hopes because I was watching TV and they couldn’t play the song. Oh well. It still tasted good to me.

Homemade Beef Stroganoff

Jennifer and I teamed up to make dinner tonight. We used our leftover roast to make Beef Stroganoff from scratch! It was AMAZING! I used some Chickpea Pasta to boost the protein a bit. No one could tell a difference!

Beef Stroganoff over Linguini

Jennifer found a new recipe for Beef Stroganoff. We made it our own by using what we had in the house … Steak Fajita Meat, a bit of Red Wine, Fresh Mushrooms and Linguini. I really enjoyed it, but I think my favorite part was us working as a team to get the meal on the table.

Tuesday Night Leftovers

We had leftovers for dinner tonight. I ate White Chicken Chili, Swedish Meatballs and Roasted Vegetables.

Swedish Meatballs

Jennifer and the girls made us Swedish Meatballs with Homemade Sauce. I had some when I returned from my monthly local Pampered Chef meeting. It was yummy!

Pasta Pomodoro

I ate Pasta Pomodoro, which is fresh garlic sautéed in butter, white wine and olive oil with fresh basil and Roma tomatoes. It was served with a yummy bread stick. If you have a chance to visit Teddy’s Spaghetti, do it!

Teriyaki Noodle Stir Fry

Morgan made Teriyaki Noodle Stir Fry for dinner, which was made with Odon Noodles. It gave me just enough to help me relax after a long day at work.

Turkey Tetrazzini

Jennifer found a new recipe, and I was finally home to enjoy it. She made an amazing Turkey Tetrazzini.
