Homemade Meatloaf & Air Fried Potatoes

Jennifer and the girls made dinner tonight. Jennifer made her famous Meatloaf, Morgan sliced and fried some Potatoes in our Deluxe Air Fryer, and Sophie steamed some Vegetables. A great meal!

Artisan Meatloaf

Jennifer gave her famous Meatloaf a few extra twists for dinner tonight. First she added chunks of Yellow Bell Pepper. And, we broke out of the loaf pan and made it in our Half-Sheet Pan and Baking Rack. I thought it was very tasty! We served it with Mac ‘N Cheese and Steamed Broccoli.

Leftover Meatloaf Spaghetti

I chose to make my own concoction out of two meals that my family wasn’t crazy about the first time around. I took my Hidden Veggie Marinara Spaghetti and added in the leftover Cheese-Stuffed, Bacon-Wrapped Meatloaf. I chopped up the meatloaf and added a can of Roasted Tomatoes and some shakes of Crushed Peppercorn and Garlic Rub. It didn’t turn out too bad if I do say so myself!

Cheese-Stuffed, Bacon-Wrapped Meatloaf

I made a Cheese-Stuffed, Bacon-Wrapped Meatloaf. It took a lot longer to cook than the recipe called and wasn’t a flavorful as I had hoped, but it was pretty tasty. It I try it again, I’ll cook it on a rack so the bacon crisps up all around it. I added a few mini bell peppers to up my veggie count for the day.

Jennifer made her amazing Meatloaf, Morgan added some Mac ‘N Cheese to go with the Veggies. It was better than I remembered!

Tonight, we made Meatloaf with Broccoli and Mac ‘N Cheese for dinner.

Meatloaf Night

Jennifer welcomed me home with meatloaf almost ready to go into the oven. She modified her family’s recipe by adding a few different Pampered Chef spices. For sides, we had veggies, macaroni salad and potato salad.
