Tonight was like a “fend for yourself” night for dinner, but we each had a single-serving meal. Mine was Fried Chicken Breast with Mashed Potatoes with Gravy and a Country Ranch Salad.

Rotisserie Chicken with Asparagus & Mashed Potatoes
I tried to stack some Chicken Thighs on our rotisserie spit, and they edges came out just as expected! Unfortunately, the inside was not quite up to temperature. So, I stuck them in our Deep Covered Baker and popped them in the microwave. After 5 minutes, the chicken was fully cooked, juicy and still had its crispy skin. I served it with Air Fryer Roasted Asparagus and Mashed Potatoes.
Easter Dinner Delivery
Our weekly dinner delivery was saved for Easter, and it was AMAZING! We had DoorDash bring us the meal from Aspen Creek Grill. We shared an order of Loaded Potato Skins. I had a Medium-Well Ribeye with Pow-Pow Shrimp, Seasoned Rice and Mashed Potatoes. I topped it off by making Fried Oreos in our Deluxe Air Fryer.
Pot Roast with Mashed Potatoes
We made Pot Roast and Mashed Potatoes in our Quick Cooker for dinner tonight. Jennifer chopped the onion, carrots and potatoes. And, she used the pan juices to make an amazing Mushroom Gravy. We used homemade chicken broth in the Buttery Garlic Mashed Potatoes cooked in the Ceramic Pot. That is Sophie’s absolutely her favorite way to have them.
Sirloin & Shrimp
I had a Medium-Rare Sirloin, Powwow Shrimp, Mashed Potatoes and a Creamy Corn. It was even better than I wanted it to be! And, I washed it down with a bottle of Yuengling Light
Rotisserie Pork Loin
I tried making a Rotisserie Pork Loin in my Deluxe Air Fryer for the first time, and I think I may have cooked it a little too long. I was a little bummed because I was looking forward to the juicy goodness from other roasts I cooked in it. It still had good flavor. We served it with Quick Cooker Mashed Potatoes and Sautéed Garlic and Spinach.
Chicken Fried Chicken
I had a Sunday Homestyle Chicken topped with Sawmill Gravy and Mashed Potatoes, Carrots with Brussels Sprouts N’ Kale Salad and a Homemade Buttermilk Biscuit. It was AMAZING!
First Friday Fried Chicken
For dinner, I ate Fried Chicken with Coleslaw, Mashed Potatoes, Gravy and a Buttermilk Biscuit. It was even tastier than I remembered it.
Pecan Crusted Chicken
We ordered a stack of Tater Tots with a Sriracha Sauce on the side to protect Morgan’s delicate palate. I ate Pecan Crusted Chicken Breasts with Mashed Potatoes and Green Beans. It was amazing. And, I washed it down with a Red Rum Sangria. Overall, a good day spent with the family.
Thanksgiving Feast
For Thanksgiving dinner, I roasted the Turkey on my Half Sheet Pan and Baking Rack instead of a roaster pan. It seemed like it worked well because I could have the Sweet Potatoes roasting on the pan at the same time. We made a TRIPLE batch of Quick Cooker Mashed Potatoes, and they were just as good as a single batch! Gram made her Famous Pie Crust, and Mom tested out our Apple Slicer/Peeler to make the filling. She said she might even be brave enough to make it in her own with how easy it was. Sophie joined her to make the Green Bean Casserole, and Morgan made the Dressing. I made some Quick Cooker Smashed Brussels Sprouts and had a failed attempt at making gravy. Oh well, we can get everything perfect.
