Fajitas Texanas

To celebrate Cinco de Mayo and Taco Tuesday, we ordered food delivered from El Rodeo Mexican Restaurant. DoorDasher brought me Fajitaa Texanas, which includes Steak, Chicken and Shrimp. It was yummy, and I washed it down with a Pink Lemonade Margarita while visiting with my family in Michigan, South Carolina and Arizona on their Facebook Portals. Nice visit.

Grilled Chicken Wraps

We had two tortillas, and I used them with some leftover Rotisserie Chicken, Spinach and Raspberry Habanero Sauce. I grilled them on our Nonstick Grill Pan and Press.

Whopper

Morgan brought us home dinner. I ate a Whopper with Cheese, Fries and a Coke.

Bruschetta Pasta

We tried another new Pampered Chef recipe tonight, Bruschetta Pasta. It was all cooked in our Rockcrok Dutch Oven in the microwave in 20 minutes.

California Grilled Chicken Sandwich

I enjoyed a California Grilled Chicken Sandwich for dinner tonight. It had Applewood Smoked Bacon, Avocado, Swiss Cheese, Lettuce, Tomato, Onion and Garlic Mayo toppings.

General Tso’s Chicken

At our Pampered Chef Christmas Party tonight, we had General Tso’s Chicken with a Red Pepper and Walnut Dip. Great food. Great visit. Great team building.

Date Night Dinner

Jennifer and I went to Logan’s Roadhouse, and I ordered their seasonal special, a Double Bacon Sirloin with a Vegetable Skewer. My steak reminded me more of a filet because it was so think, and the Bourbon Bacon Glaze gave it just the right touch of sweet and spicy. However, by far the star of the show was the Skewer of Thick, Blackened Brown Sugar Bacon. I was in HEAVEN! I thought about getting the Bacon On a Stick appetizer, but I decided against it because of the bacon on my steak. I would not have appreciated the steak if I had the appetizer. In fact, I may not have wanted to even eat it.

Roasted Mushroom Reuben

After work, I stopped by Twenty Tap with some colleagues to help solve the world’s problems. I fully enjoyed my Roasted Mushroom Rueben Sandwich and Fries. The Portabellas was just what I was looking for.

Grilled Ham & Cheese, Asparagus and Soup

For dinner tonight, I tried my hand at making us Inside-Out Grilled Ham & Cheese, Bacon-Wrapped Asparagus with Roasted Red Pepper and Tomato Soup. It didn’t turn out like I had pictured it, but it was still tasty.

Celebrating National Nachos Day

Ever since this morning when I noticed it was National Nachos Day, I’ve been fighting back my cravings all day long. I even skipped lunch to save it all for tonight, and I was absolutely thankful I did! I made my take on Pampered Chef’s Grill Loaded Nachos recipe. The original was vegetarian, but I added ground beef seasoned with Southwest Seasoning Mix. It was incredible! I had a huge plate full and washed it down with an icy Yuengling Light. Now, I feel like a tick ready to burst. I’m sooooo satisfied!
