New Year’s Ham Fried Rice
For dinner tonight, we made Ham Fried Rice. I chopped up a bunch of leftover ham. Sophie made a batch of Rice in our Quick Cooker, and Morgan helped me fry it up in our Nonstick Stainless Steel Wok. It was a tasty start to 2021.
Family-Size Stuff Chicken Breasts
We ordered a family dinner delivered from Houlihan’s through DoorDash. The meal included Stuffed Chicken Breasts, Garlic-Herb Cream Cheese, Honest Gold Mashed Potatoes and Green Beams. It also included an amazing Salad, Bread Sticks, Houlihan’s Famous Shrooms and a Brownie Batter Cake.
Enriched Shepherd’s Pie
For dinner tonight, we made Shepherd’s Pie, but we were a little low on potatoes so we added cauliflower to it and added a package of Scalloped Potatoes. I also added a packet of Enrichables Pea Protein to the potatoes and a packet the Kale & Fiber to the meat sauce. It was yummy!
Pretzel Dogs with Mac ‘N Cheese
While Sophie worked in her homework, I made dinner tonight. I cooked Pretzel Dogs with Mac ‘N Cheese and Steamed Green Beans.
Repeat Fried Rice
We loved the Fried Rice we made last week so much, we had to make it again. It was amazing, and we made enough this time to have a little second helping.
Homemade Fried Rice
We used up our leftover Roast, Pork Chops and Rice and made a recipe Jennifer found online called “The BEST Fried Rice” … and, it was really good. I think next time we may have to double the recipe.
Pecan Crusted Chicken
We ordered a stack of Tater Tots with a Sriracha Sauce on the side to protect Morgan’s delicate palate. I ate Pecan Crusted Chicken Breasts with Mashed Potatoes and Green Beans. It was amazing. And, I washed it down with a Red Rum Sangria. Overall, a good day spent with the family.
Second Thanksgiving Plate
I fixed myself a plate of all the Thanksgiving fixins. I think it was even tastier than I wanted it to be. Turkey, Mashed Potatoes, Sweet Potato, Green Bean Casserole and Brussels Sprouts. And, I followed it up with a slice of Apple Pie.
Thanksgiving Feast
For Thanksgiving dinner, I roasted the Turkey on my Half Sheet Pan and Baking Rack instead of a roaster pan. It seemed like it worked well because I could have the Sweet Potatoes roasting on the pan at the same time. We made a TRIPLE batch of Quick Cooker Mashed Potatoes, and they were just as good as a single batch! Gram made her Famous Pie Crust, and Mom tested out our Apple Slicer/Peeler to make the filling. She said she might even be brave enough to make it in her own with how easy it was. Sophie joined her to make the Green Bean Casserole, and Morgan made the Dressing. I made some Quick Cooker Smashed Brussels Sprouts and had a failed attempt at making gravy. Oh well, we can get everything perfect.
