Pasta Carbonara

I called Gram on my way home from work, and we were discussing life and recipes. That got my craving going for homemade Pasta Carbonara, and I had to run to the store and buy the ingredients. It was amazing!

Hidden Veggie Pasta

At my Pampered Chef meeting, we made Hidden Veggie Pasta Sauce in our Deluxe Cooking Blender. For our sweet treat, we made a Quick Cooker Pumpkin Cream Cheese Bundt Cake, which was amazing!

Mediterranean Braised Chicken

We had Mediterranean Braised Chicken complete was Artichoke Hearts, Olives, Tomatoes and seasoned Feta Cheese. We cooked it in our Rockcrok on the stove, in the microwave and under the broiler.

Rio Grande Nachos

I know the recipe calls it “Rio Grande Dip,” but it was big enough to feed all of us. We turned it into an amazing Rio Grande Nacho dinner. The dip is made in a Rockcrok on the stove and in the oven. It was amazing!

Quick Cooker Oktoberfest

I finally had a chance to make my family the Quick Cooker One-Pot Oktoberfest dinner. I had everything on hand except the BEER! Who would’ve imagined. After a quick trip being chauffeured to the liquor store by my driver-in-training, it was game on! I very much enjoyed the meal, but not everyone was a fan after hearing about how Sausage was made in school. Oh well, more for me!

Risotto Round 2

This was our second time making Quick Cooker Cheddar Broccoli Risotto with Chicken, and I think it was even better this time. Jennifer chopped the veggies and pressed the garlic, Sophie made sure we had just the right amount of broth, Morgan shredded the cheese, and I was chicken chopper and put it all together.

Anniversary Dinner

I started with a Hamilton Co. Smash, the official drink of Hamilton County, Indiana. We shared a Fried Goat Cheese Caprese appetizer, and while it was OK, I think I prefer to the the unfried mozzarella. For my entree, I ordered the Durango Ribeye served with garlic mashed potato, portobello, bleu cheese, tomato, spinach, bacon. It was a little more done than I preferred, but it was still tasty. For dessert, we shared a creme brûlée, which was simply amazing!

Memorial Shepherd’s Pie

I made Shepherd’s Pie. This recipe included ground beef browned with an onion and a couple cloves of garlic, a can of sweet corn, a can of green beans and a can of tomato soup. Don’t tell my family, but I added a packet of our new Enrichables with Kale & Fiber. Added nutrition with no change in taste. I think almost everyone went back for seconds!

Domino’s Delivers

We ordered a feast for dinner. I had a couple slices of Hand Tossed Pizza, half a Mediterranean Veggie Sandwich, a few Parmesan Bread Twists and some Sweet Mango Habanero Wings. I followed that up with a piece of the Marbled Cookie Brownie. If you haven’t had one, you’re missing out!

One-Pot Oktoberfest

Together, our team made Quick Cooker One-Pot Oktoberfest as well as Nacho Cheese Sauce in our Deluxe Cooking Blender. Both had rave reviews and were enjoyed even by the skeptics in the group. I *may* have added more beer than it called for, but the flavors were great. Who would have thought you could perfectly steam quartered potatoes and inch-long pieces of carrots in THREE minutes?
