Celebrating National Nachos Day

Ever since this morning when I noticed it was National Nachos Day, I’ve been fighting back my cravings all day long. I even skipped lunch to save it all for tonight, and I was absolutely thankful I did! I made my take on Pampered Chef’s Grill Loaded Nachos recipe. The original was vegetarian, but I added ground beef seasoned with Southwest Seasoning Mix. It was incredible! I had a huge plate full and washed it down with an icy Yuengling Light. Now, I feel like a tick ready to burst. I’m sooooo satisfied!

Hongos Tacos with Street Corn

I ate Hongos Tacos, which were made of balsamic grilled mushrooms, black bean purée, chihuahua cheese, poblano rice, pico de gallo and guacamole. I paired them with Grilled Street Corn and some amazing Sweet Chili-Glazed Cracked Potatoes. Finally, I washed it down with a couple Margaritas on the rocks.

Memorial Shepherd’s Pie

I made Shepherd’s Pie. This recipe included ground beef browned with an onion and a couple cloves of garlic, a can of sweet corn, a can of green beans and a can of tomato soup. Don’t tell my family, but I added a packet of our new Enrichables with Kale & Fiber. Added nutrition with no change in taste. I think almost everyone went back for seconds!

Fried Chicken Snack

We left Utah today and headed toward South Dakota to see the Crazy Horse Memorial and Mount Rushmore. We made one stop during today’s trip. It was a travel stop that had a Subway and Chesters Chicken. I ordered a Three Piece Chicken Snack with a side of Fried Corn and a Honey Biscuit. It was a well-timed and tasty break!
