Fending for Ourselves Night

Tonight we had a Fend for Ourselves night for dinner. I chose leftover Mediterranean Meatballs and a Stuffed Portobello Mushroom.

Birthday Girl’s Choice

To celebrate Sophie’s birthday, I made her Happy Birthday Croissant French Toast, and she chose what we had for dinner. We ordered Chicken & Artichoke Pizza, Sweet Habanero Wings, Mediterranean Meatballs, Bread Sticks and Stuffed Portobello Mushrooms from Boombozz Craft Pizza & Taphouse. It was tasty, and then we had Blizzards from Dairy Queen for dessert. I hope it was a special day for her.

Cauliflower Pizza

After making a trip to Costco, I was too tired to cook. So we made our favorite frozen pizza … Roasted Veggie Cauliflower Pizza, and we tested out a new Plant-Based Sausage Pizza on a Cauliflower Crust, too. I liked both of them. We served them with a Salad.

Asparagus-Stuffed Chicken Breasts

For dinner, Sophie baked us Asparagus-Stuffed Chicken Breast and sliced some Cranberry Sauce. Morgan made stuffing and Steamed Peas & Carrots.

Fried Drumsticks with Mac & Peas

For dinner tonight, I made another batch of Crispy Drumsticks in our Deluxe Air Fryer, and Morgan made us Mac ‘N Peas to go with them. She pretended not to include the Enrichables Pea Protein in the Mac ‘N Cheese, but I’m sure she did as I asked. She also steamed Peas. Very satisfying meal.

Bruschetta Pizza

I was craving pizza tonight, and we ordered from Chicago’s Pizza. I had Deep Dish Bruschetta Pizza, a piece of Garlic Cheese Bread and a Pepperoni Stick. I added some Apple Slices to include some healthy carbs.

Enriched Shepherd’s Pie

For dinner tonight, we made Shepherd’s Pie, but we were a little low on potatoes so we added cauliflower to it and added a package of Scalloped Potatoes. I also added a packet of Enrichables Pea Protein to the potatoes and a packet the Kale & Fiber to the meat sauce. It was yummy!

Power Bowl

The girls brought us dinner home tonight. I had a Power Bowl with a CrunchWrap and Pink Lemonade.

Chili Lime Baked Chicken

For dinner tonight, I made Chili Lime Baked Chicken. Morgan made us Parmesan Couscous and Steamed Broccoli.
