For dinner tonight, I baked Tilapia two way … Tortilla Crusted and Planko Crusted. I served it with Baked Broccoli, Bacon and Mushrooms.

Ribs, Chicken, Corn & Rice
For dinner tonight, I had a Baby Back Ribs, Cheesy Bacon BBQ Chicken with Roasted Street Corn, Mexican Rice, Chile-Garlic Toast & Garlic Dill Pickles. And, I washed it down with a nice cold Yuengling Light! It was just when the doctor ordered after surviving the first full workweek of the new year!
Pasta Tuesday
We made a Chicken, Artichoke and Sun-Dried Tomatoes Pesto Pasta, our take on a Pampered Chef recipe. I enjoyed it very much!
Meatless Monday – Cheese Pizza
Morgan made our first Meatless Monday dinner of the year … Cheese Pizza. It was a gluten free frozen pizza from Costco. The crust was crispy and just as tasty as I had hoped.
Cheesy Chicken Bruschetta Dip
I fully enjoyed the Cheesy Chicken Bruschetta Dip with Wheat Thins and Pita Chips. We made it in our Rockcrok Everyday Pan and served it in the Small Entertaining Bowl.
First 2020 Leftovers
For dinner, I had leftovers. Lasagna with Mixed Vegetables. No sense letting them go to waste!
Pecan Crusted Chicken
We ordered a stack of Tater Tots with a Sriracha Sauce on the side to protect Morgan’s delicate palate. I ate Pecan Crusted Chicken Breasts with Mashed Potatoes and Green Beans. It was amazing. And, I washed it down with a Red Rum Sangria. Overall, a good day spent with the family.
Christmas Munchies
I whipped up a couple of our favorite (and easy) Pampered Chef recipes … Easy Honey Teriyaki Meatballs in our Quick Cooker and Cheesy Chicken Bruschetta Dip, which was microwaved in a Rockcrok. Both turned out great!
Holiday Ham & Sausage Omelette
I ate a Holiday Ham & Sausage Omelette with a side of Pancakes.
Alfredo MontAmore with Parmesan-Crusted Chicken
I scarfed down an Alfredo MintAmore with Parmesan-Crusted Chicken and shared an order of Pot Stickers.
