Pigs-in-a-Blanket Casserole

We celebrated National Pigs in a Blanket Day by making a casserole, which featured Kielbasa and Swiss Cheese wrapped in a Pastry with a Black Olive garnish. It was served with Air Fried Potatoes. I also made us appetizers of a couple stacks of a Ritz Cracker topped with Peanut Butter, a Bread & Butter Pickle Slice and a Black Olive with White Cheddar Skewer.

Chicken Alfredo with Salad

Morgan made dinner tonight. Chicken Alfredo accompanied by a Country Ranch Salad. They both were yummy.

Spinach & Artichoke Chicken Rolls

Jennifer found another new recipe for dinner tonight, and it was a hit! We made a few tweaks to the Spinach & Artichoke Chicken Rolls. We didn’t have any mozzarella, and we split the three chicken breasts we had in half to give us six rolls. We made more of the filling than would fit into the chicken, but we turned it into a Spinach & Artichoke Dip appetizer. I also browned the rolls in our Cast Iron Skillet before cooking them our Deluxe Air Fryer. We served Roasted Veggies that had a nice crust on the outside with deliciously soft and tasty inside.

Quick Cooker Risotto

I whipped up a batch of Quick Cooker Risotto, but I wouldn’t have happened without my family’s assistance.

Tamale Night

For dinner tonight, I decided to toss another batch of Tamales into our Quick Cooker. One was a Sonora, which had shredded chicken and green chili, and two smaller ones were Sweet Pumpkin.

Chipotle Steak Bowl

On my way home from my chiropractor appointment, I picked up dinner from our Chipotle Drive-Thru! Yes, you heard that correctly! It only takes online orders. If you want to place an order, you have to go inside. I was out of the house for almost one whole hour!

Tamale Tuesday

I steamed some Tamales shipped to us from New Mexico for dinner. They only told 15 minutes in our Quick Cooker. I really enjoyed them.

Chicken, Stuffing, Asparagus with Cranberry Sauce

Tonight Jennifer asked for Asparagus Stuffed Chicken Breasts, Stuffing, Roasted Asparagus and Cranberry Sauce. So, as a team, we sprung into action. Sophie knocked out the stuffing and popped the chicken in the oven. Morgan washed and snapped the asparagus before I loaded them in the Deluxe Air Fryer to roast for a few minutes. Finally, Sophie took her grandma’s cranberry sauce recipe and made it her own with extra thick slices.
