One-Pot Oktoberfest

Together, our team made Quick Cooker One-Pot Oktoberfest as well as Nacho Cheese Sauce in our Deluxe Cooking Blender. Both had rave reviews and were enjoyed even by the skeptics in the group. I *may* have added more beer than it called for, but the flavors were great. Who would have thought you could perfectly steam quartered potatoes and inch-long pieces of carrots in THREE minutes?

Sunday Night Roast

Tonight we made a Quick Cooker Pot Roast with Mashed Potatoes, and it turned out perfectly! The roast was fall-apart tender. The mashed potatoes were creamy, garlic and buttery. The carrots we tender. And, it was all done in 45 minutes.

Pork Fried Rice

We made a dinner from a Pampered Chef Freezer Meal Workshop recipe. Chicken Fried Rice was pretty tasty if you ask me. Morgan was my Sous Chef for the night and chopped the veggies, and I handled the slicing of the tenderloin and the frying everything up in a pan.

Quick Cooker Roast

Thanks to our Quick Cooker, We could fully cook a Roast, Veggies and Mashed Potatoes in about 30 minutes. I was happy it was done so quickly because all of my running around made me hungry. And, we ate it all up!

Paddy’s Day Dinner

We celebrated Saint Patrick’s Day with a home-cooked Corned Beef and Cabbage dinner. I tweaked a Pampered Chef recipe to make it in our Quick Cooker. Done in about 2 hours.

Pan-Fried Cod with Asparagus & Carrot Purée

I “generously” seasoned the fish on both sides with salt and pepper before placing them into a hot skillet coated with melted coconut oil. I chose a couple thick pieces and a couple thin ones because my wife and I are more fond of fish than our daughters are. That appears to be a mistake. I’m not a fish expert, and although I enjoy sushi, my family wants to ensure it is dead. With two vastly different thicknesses, it’s hard to get them all finished at the same time.
