Broccoli & Cheese Stuffed Chicken Breasts

Morgan made us a feast for dinner on her first day of her Christmas break. She made Broccoli & Cheese Stuffed Chicken Breasts, Stuffing and Buttery Steamed Peas. I’m thankful for a full belly. My hat’s off to her.

Freezer Finds & Leftovers

We didn’t make it to the grocery store today, so I dug through our freezer to see what I could find. I ended up making Apple & Gouda Chicken Sausages in our Deluxe Air Fryer, Steamed Broccoli in our 2-qt. Micro-Cooker, Beef Bulgogi in our 12-inch Nonstick Stainless Steel Skillet and leftover baked Mac & Cheese.

Logan’s Delivered

We ordered dinner from Logan’s Roadhouse. I had Teriyaki-Glazed Chicken, Grilled Shrimp, Rice Pilaf and Steamed Broccoli with some amazing Dinner Rolls. Unfortunately, the rolls were the star of the show. Oh well, my belly was still full.

Pork Chop Leftovers

I grabbed a Pork Chop from the fridge and popped it into the Deluxe Air Fryer with a pad of butter. After 5 minutes on reheat, it was good to go!

Flank Steak with Roasted Veggies and Sautéed Mushrooms

I found an amazing marinade recipe for Flank Steak and baked it on my Baking Rack over the the Roasted Veggies on the Half Sheet Pan. I also sautéed Mushrooms and Onions in butter. A great meal with a perfect medium rare steak.

Veggie Lasagna

We baked a frozen Veggie Lasagna for dinner tonight. Not bad, but I missed the meaty sauce.

Homemade French Onion Rice

I tried a new recipe that I found online: French Onion Rice. We paired it with a salad and fresh Vegetables. It was quite tasty.

Panda Express craving satisfied

I decided to send my girls on a meal run to Panda Express. They picked up a family meal deal. It included Chow Mein, Fried Rice, Orange Chicken, Broccoli Beef, and Sweetfire Chicken. We added a small order of Mushroom Chicken, Cream cheese Rangoons and Veggie Spring Rolls. My craving was totally satisfied!

Working Hard in the Kitchen

For dinner tonight, the whole family chipped in. Sophie Baked our Broccoli-and-Cheese-Stuffed Chicken Breasts, Morgan made the Stuffing, I made the Cauliflower in the Deluxe Air Fryer Rotisserie Basket, and Jennifer sliced the Cranberry Sauce using Sophie’s technique. Tasty meal.
