Quick Cooker Oktoberfest

I finally had a chance to make my family the Quick Cooker One-Pot Oktoberfest dinner. I had everything on hand except the BEER! Who would’ve imagined. After a quick trip being chauffeured to the liquor store by my driver-in-training, it was game on! I very much enjoyed the meal, but not everyone was a fan after hearing about how Sausage was made in school. Oh well, more for me!

Anniversary Dinner

I started with a Hamilton Co. Smash, the official drink of Hamilton County, Indiana. We shared a Fried Goat Cheese Caprese appetizer, and while it was OK, I think I prefer to the the unfried mozzarella. For my entree, I ordered the Durango Ribeye served with garlic mashed potato, portobello, bleu cheese, tomato, spinach, bacon. It was a little more done than I preferred, but it was still tasty. For dessert, we shared a creme brûlée, which was simply amazing!

Amazing Bacon-Wrapped Chicken Thighs

We can’t help it. We *love* Bacon-Wrapped Chicken Thighs! And, with our new Instant-Read Food Thermometer, they were perfectly done and juicy. We paired them with Maple Bacon Brussels Sprouts for a great meal after a busy day.

One-Pot Oktoberfest

Together, our team made Quick Cooker One-Pot Oktoberfest as well as Nacho Cheese Sauce in our Deluxe Cooking Blender. Both had rave reviews and were enjoyed even by the skeptics in the group. I *may* have added more beer than it called for, but the flavors were great. Who would have thought you could perfectly steam quartered potatoes and inch-long pieces of carrots in THREE minutes?

Leftover Meatloaf Spaghetti

I chose to make my own concoction out of two meals that my family wasn’t crazy about the first time around. I took my Hidden Veggie Marinara Spaghetti and added in the leftover Cheese-Stuffed, Bacon-Wrapped Meatloaf. I chopped up the meatloaf and added a can of Roasted Tomatoes and some shakes of Crushed Peppercorn and Garlic Rub. It didn’t turn out too bad if I do say so myself!

Cheese-Stuffed, Bacon-Wrapped Meatloaf

I made a Cheese-Stuffed, Bacon-Wrapped Meatloaf. It took a lot longer to cook than the recipe called and wasn’t a flavorful as I had hoped, but it was pretty tasty. It I try it again, I’ll cook it on a rack so the bacon crisps up all around it. I added a few mini bell peppers to up my veggie count for the day.

Bacon, Lettuce, Tomato & Avocado

I had a Bacon, Lettuce, Tomato and Avocado Sandwich and a White Chocolate Macadamia Cookie. I washed it down with a $4 bottle of water.

Bacon-Wrapped Chicken Breasts with Homemade Cauliflower Soup

For dinner, I modified a repeat recipe and baked Bacon-Wrapped Chicken Breasts. I think they are juicier when I use the chicken thighs, but they were still super tasty. I paired that with a wonderful HOMEMADE Cauliflower Soup made from scratch! I felt like a regular Martha Stewart!

DQ FlameThrower

After a long day at work and a busy day for the family, I gave in and hit the Dairy Queen drive thru on my way home. I ordered a 1/2 lb FlameThrower GrillBurger Combo. I guess I didn’t read the “FlameThrower” part or notice the “jalapeño bacon” when I ordered it. I without a doubt did notice it when I scarfed it down. I didn’t fling it to the ground yelling “spicy” like my daughter would have, but I could taste the kick.

Family made Bacon-Wrapped Chicken Thighs

The family made a great dinner tonight as a team. Bacon-Wrapped Chicken Thighs, Balsamic-Glazed Brussels Sprouts and Stuffing. Jennifer and Sophie teamed up on the Brussels Sprouts. Morgan made the Stuffing. I crafted the Chicken with assistance from Sophie measuring the spices. Teamwork makes the dream work!
