I browned up some hamburger and added some taco seasoning. While it was simmering, I dumped a bunch of corn tortilla chips on my Rockcrok Grill Stone, added the taco meat and topped it off with shredded cheddar. After a few minutes in the oven to melt the cheese, and it was time to eat! These Nachos were even tastier than last night’s Chips and Queso. Maybe it was because it just felt great celebrating!
Chips with Queso
We didn’t feel like cooking tonight and decided on having a leftover night. I chose to heat up our Queso dip and pour it over the last bits of tortilla chips in the bag. It may not be the most healthy of meals, but it was tasty and was even better when I washed it down with an ice cold Coke.

Vendor Event Loaded Nachos
Among the food options, I chose the Loaded Nachos, which included chips, taco meat, queso, sour cream and salsa. It wasn’t the best, but when you’re at an event, you can’t be too picky. It prevented my stomach from eating itself.
Italian Family Night
Tonight’s family night had an Italian theme. We served Spaghetti with meatballs in a marinara sauce, Garlic Breadsticks and Red Velvet Cupcakes in winter shapes.
Pan-Fried Cod with Asparagus & Carrot Purée
I “generously” seasoned the fish on both sides with salt and pepper before placing them into a hot skillet coated with melted coconut oil. I chose a couple thick pieces and a couple thin ones because my wife and I are more fond of fish than our daughters are. That appears to be a mistake. I’m not a fish expert, and although I enjoy sushi, my family wants to ensure it is dead. With two vastly different thicknesses, it’s hard to get them all finished at the same time.

When Jennifer asked if we could order out for dinner tonight, I told her I’d been craving pork chops and Mac ‘N Cheese, but that was if we cooked it at home. The more I thought about it, I still wanted pork chops, and I ended up ordering Chili Rubbed Pork Chops after she decided on Aspen Creek Grill! But, instead of the cheesy goodness, I wanted mashed potatoes. And, I added a side of broccoli! We’ve ordered from there before, and once again, it was superior service and excellent food!
Chili with Cornbread Casserole
What I think is most special about our Quick Cooker Homemade Chili recipe is that it uses Beef Chuck Pot Roast instead of traditional hamburger. The Quick Cooker makes it nice and easy. Jennifer chopped the veggies, minced the garlic and rinsed the beans while I cubed roast. She seared the veggies, garlic and spices for four minutes. Then, we added the rest of the ingredients.
Beef Burger Patties with Greek Salad
The burgers included crumbled feta cheese, Dijon rub, oregano, salt and pepper. I grilled the patties in my Nonstick Grill Pan and topped it with my Grill Press. It only took 4 minutes on each side. I sliced a Roma tomato, added a few onion slices and served it on a Hawaiian roll. I added a little car chip and Dijon mustard to mine.
Leftover Night
We didn’t feel like cooking tonight and agreed to tackling our leftovers in the fridge. I chose tamales and made a quick chopped salad with a bit of cranberry to sweeten it up just a touch.
