Spaghetti with Meat & Mushroom Sauce

Jennifer whipped up a batch of Spaghetti with Meat and Mushroom Sauce, and it was a tasty meal with no leftovers. Oh well, I work from home tomorrow and have many opportunities to find something for lunch.

Beef Stroganoff & Green Beans Casserole

I tried a new Pampered Chef recipe for dinner tonight. Beef Stroganoff & Green Bean Casserole was quick and easy meal made in my Rockcrok Everyday Pan. After about 20 minutes total in the microwave, dinner was served! It also works in our Deep Covered Baker.

Mexican Night II

Sophie chose the Mexican theme for tonight and made Mini Tacos, Jennifer tried a new recipe for Cheesy Chicken Enchiladas, and I made Mexican Fried “Rice.” A little late to the game, Morgan made her versions of Cheese Tostadas, which were like her famous cheese quesadillas but open faced.

Asparagus-Stuffed Chicken Breast

My family made us an Asparagus-Stuffed Chicken Breast with a side of stuffing and jellied cranberry sauce right from the can just like we grew up eating.

Valentine’s Day Surprise

Sophie whipped up a batch of Kraft’s best Mac ‘N Cheese with some Costco-Sized hotdogs. If you haven’t stopped by the food court and ordered a $1.50 hotdog (which includes a drink), you are missing out! It’s a quarter-pound, 100% all-beef hotdog of pure goodness.

Ravioli with Alfredo Sauce

To celebrate Tortellini Day, I looked up a new recipe, but I worked late. While I was changing out of my work clothes, my wife had my daughter make some of the valentine raviolis I had saved in the fridge. I guess I’ll have to find something else to make tomorrow.

Taco Tuesday Casserole

I followed the Taco Tuesday Casserole recipe almost to a T. The only thing I didn’t have was taco seasoning. Fortunately, my Southwestern Seasoning Mix arrived over the weekend, and I was happy to test it out! Because of my daughter’s delicate palette, I didn’t add as much as was in the recipe. The meat was a little bland, and I’ll add more next time!

Leftover Night

Dinner tonight was fend for yourself Leftover Night. I chose the leftover pizza and heated them to perfection in my Round Covered Baker. In only 30 seconds, one slice of the combination and one slice of ham ‘n pineapple tasted like when they were delivered.

Asian Night

For Asian night, I made Egg Roll in a Bowl, Jennifer made Vegetable Fried Rice, Morgan made Dumplings, and Sophie made Beef and Broccoli. For entertainment, we watched Crazy Rich Asians.

Celebrating National Pizza Day

We hopped on the Domino’s app and let them bring us dinner to celebrate National Pizza Day. We even earned a medium, two-item pizza for free! We ordered the favorite of the girls, Ham and Pineapple. Our second was a medium Combination pizza. We wrapped up the meal with Parmesan Bread Twists and a Marbled Cookie Brownie for dessert.
