My family had dinner already in the oven when I made it home from work. Lasagna a la Stouffer’s was as good as I remembered it.
Celebrating Burger Day
After a long day, I enjoyed a Whiskey River BBQ Cheeseburger to celebrate Burger Day. Our DashPass has our dasher deliver it from Red Robin and saved us another $5.58. Cha-Ching!
Stuffed Pork Loin
I made a Pork Loin Stuffed with Bacon and Mushrooms on my Grill Pan, and the family thought it was a little more caramelized than they preferred. Jennifer roasted some potatoes and steamed veggies.
Cheesy Eggs, Bacon and Sausage
Tonight, Morgan made us her famous Cheesy Eggs, and I popped some Maple Sausage Links and Bacon Strips into the oven. If you have a Pampered Chef Bar Pan, baking your sausage and bacon keeps the splatter from your stovetop. It also is a great way to start seasoning a new stone.
Mini Chicken Tacos
Morgan made Mini Chicken Tacos, and I washed mine down with some ice-cold water and a coke while we watched Small Foot.
Spicy Korean Beef Noodles
To celebrate Morgan’s very last day of high school and Sophie’s last day as a sophomore, we let her pick what we had for dinner. She chose noodles. I ate a batch of Spicy Korean Beef Noodles with a couple Potstickers and Garlic Bread.
Berry Fresh Grilled Chicken Salad
For dinner tonight I had a Berry Fresh Grilled Chicken Salad with a Light Berry Vinaigrette Dressing. It was pretty amazing after some of the not-so-healthy food I’m been sucking down lately.
Stuffed Chicken Breast with Pasta Salad
It was a long day at my day job, and I was thankful for Morgan, who made tonight’s feast. She baked us Asparagus-Stuffed Chicken Breasts with a Pasta Salad Side.
Qdoba at Purdue
Morgan and I went to a dinner at Purdue Polytechnic Institute with some of the staff. I was very excited to hear about her opportunities (and I think she was, too!). They served us a spread from Qdoba, and it was tasty.
Chimichurri Steak
Tonight for dinner, we grilled some Chimichurri Steaks and served them with Garlicky Mashed Potatoes and Honey Balsamic Brussels Sprouts. See the nice grill marks made by my Grill Pan? Can you say YUM?
