After waiting an hour past the time we were told our pickup order would be ready, the food was just OK. We had a Mediterranean Lover’s Salad, a Pear-Fect Pie, Garlic Knots and Cinna-Knots. The pizza had Evoo, gorgonzola, parmesan, all natural chicken, pears, caramelized onions, balsamic glaze, cracked black pepper. It sounded better than it tasted. Oh well, live and learn. I may not visit another My Pie Pizza if there is another option.
Caprese on Ciabatta
I ordered a Caprese at Subway, and the guy behind the counter looked as if he had never heard of such a thing. Then, it was like a lightbulb went on. “Ohhhh … a Cap-rEEce.” I had to giggle. In fact I ordered a second one to see if he would do it again. Yup. Utahn-glish at its finest.
Bacon, Lettuce, Tomato & Avocado
I had a Bacon, Lettuce, Tomato and Avocado Sandwich and a White Chocolate Macadamia Cookie. I washed it down with a $4 bottle of water.
Shrimp and Pasta
Morgan made us skillet meals tonight and took her turn using our Nonstick Stainless Steel Wok. My meal was Shrimp and Pasta, and it was pretty good. Not too much to overstuff me, but enough to fill my belly. I added a new mini Bell Peppers as a crunchy side.
Sausage and Pancakes
For dinner, Morgan made us the Pancakes she’s been wanting to make since last weekend. I heated up some Applewood Maple Sausages and mixed up a batch of Strawberry Banana Smoothies to go with them.
After-Meeting Leftovers
When I returned from my meeting, I finished off the leftovers from what the family ate: A bit of Mac ‘N Cheese and an Apple & Gouda Chicken Sausage.
Italian Stuffed Zucchini Boats
I made us Italian Stuffed Zucchini Boats for dinner. They were filled with a ground beef, tomato and mozzarella that was amazing. I served it with another scoop of the Extra Filling and three Baby Bell Peppers. The girls even said that the zucchini boats “weren’t as bad as some of the vegetables” we make them eat. So, I’ll take that as a win!
Tagliatelle Grilled Chicken and Portobello Mushroom Sauce
Tonight’s dinner was Tagliatelle Grilled Chicken and Portobello Mushroom Sauce. I don’t think anyone could tell it was a family microwave meal because it tasted amazing! And, it was ready to eat in 8 minutes. Thanks, Costco!
Homemade Pizza Night
I believe this was our first Homemade Pizza Night since we moved here in 2015. Sophie rolled out the dough, Morgan spread the sauce, I added the cheese, and Sophie masterminded the pepperoni placement. She even was kind enough to leave them off of Morgan’s slices because she calls the “a little too zesty” for her delicate palate. Baking it on our Large Round Stone made the crust come out perfect! Overall, it was a nice and tasty meal that didn’t bust our budget. Sorry DoorDash!
Bacon-Wrapped Chicken Breasts with Homemade Cauliflower Soup
For dinner, I modified a repeat recipe and baked Bacon-Wrapped Chicken Breasts. I think they are juicier when I use the chicken thighs, but they were still super tasty. I paired that with a wonderful HOMEMADE Cauliflower Soup made from scratch! I felt like a regular Martha Stewart!
