Almond-Crusted Mahi Mahi

I thawed some Mahi Mahi from the freezer and tried out a new recipe I found online. I used the Almond Flour I made with our Deluxe Cooking Blender and a mixture of spices. I roasted it in our Deluxe Air Fryer along with Asparagus. It was nice and tasty.

Sirloin & Shrimp

I had a Medium-Rare Sirloin, Powwow Shrimp, Mashed Potatoes and a Creamy Corn. It was even better than I wanted it to be! And, I washed it down with a bottle of Yuengling Light

Veggie Pizza on Cauliflower Crust

OK. If you’ve never tried the Roasted Veggie Cauliflower Pizza from Costco, you are soooo missing out. The crust is crunchy, the veggies are sweet, and it is fantastic from the first time we made it. In fact, I start going through withdrawals if I don’t have it for too long. Baked in the oven, right on the rack in 12 minutes! Easy-peasy!

Homemade Beef Stroganoff

Jennifer and I teamed up to make dinner tonight. We used our leftover roast to make Beef Stroganoff from scratch! It was AMAZING! I used some Chickpea Pasta to boost the protein a bit. No one could tell a difference!

Artisan Meatloaf

Jennifer gave her famous Meatloaf a few extra twists for dinner tonight. First she added chunks of Yellow Bell Pepper. And, we broke out of the loaf pan and made it in our Half-Sheet Pan and Baking Rack. I thought it was very tasty! We served it with Mac ‘N Cheese and Steamed Broccoli.

Chicken & Squash

For dinner tonight, I roasted some Bacon-Wrapped Chicken Thighs in the Deluxe Air Fryer, and Jennifer steamed some squash. Nice quick and easy meal.

Rotisserie Pork Loin

I tried making a Rotisserie Pork Loin in my Deluxe Air Fryer for the first time, and I think I may have cooked it a little too long. I was a little bummed because I was looking forward to the juicy goodness from other roasts I cooked in it. It still had good flavor. We served it with Quick Cooker Mashed Potatoes and Sautéed Garlic and Spinach.

Mediterranean Chicken & Rice Bowls

We made one of our favorite Pampered Chef recipes, Mediterranean Chicken & Rice Bowls. We made a few variations on the recipe. Jennifer preferred to dice the onion and cucumber with a knife instead of using our super tools like the Food Chopper and Quick Slice. We also didn’t have fresh parsley, so I added some sprinkles of dried parsley to the hummus and lemon juice, and it was very tasty. I also added a few handfuls of fresh spinach to the Quick Cooker after it looked like it needed more.

Rotisserie Roast with Tortellini

I bought a Beef Roast and cooked it in our Deluxe Air Fryer on Rotisserie Mode for 65 minutes, and it came out a perfect Medium Rare. Morgan made her famous Tortellini Alfredo to go with it and steamed some Broccoli. Great meal to end a busy week.
