Quick Cooker Risotto

I whipped up a batch of Quick Cooker Risotto, but I wouldn’t have happened without my family’s assistance.

Chicken, Stuffing, Asparagus with Cranberry Sauce

Tonight Jennifer asked for Asparagus Stuffed Chicken Breasts, Stuffing, Roasted Asparagus and Cranberry Sauce. So, as a team, we sprung into action. Sophie knocked out the stuffing and popped the chicken in the oven. Morgan washed and snapped the asparagus before I loaded them in the Deluxe Air Fryer to roast for a few minutes. Finally, Sophie took her grandma’s cranberry sauce recipe and made it her own with extra thick slices.

Repeat Fried Rice

We loved the Fried Rice we made last week so much, we had to make it again. It was amazing, and we made enough this time to have a little second helping.

Hope-less Spaghetti

Jennifer and Sophie made Spaghetti for dinner, but Sophie they couldn’t call it High-Hopes because I was watching TV and they couldn’t play the song. Oh well. It still tasted good to me.

Fried Pork Tenderloin

I tried out our new Butcher’s Twine for the first time tonight. I used it to tie up a Pork Tenderloin to the rotisserie spit, and it worked like a charm! The meat had a nice crisp on the outside and juicy goodness on the inside. Sophie sautéed some Fresh Spinach, and Morgan made a Pasta Salad with Cucumbers, Tomatoes and Artichokes.

Pot Roast with Mashed Potatoes

We made Pot Roast and Mashed Potatoes in our Quick Cooker for dinner tonight. Jennifer chopped the onion, carrots and potatoes. And, she used the pan juices to make an amazing Mushroom Gravy. We used homemade chicken broth in the Buttery Garlic Mashed Potatoes cooked in the Ceramic Pot. That is Sophie’s absolutely her favorite way to have them.

Air Fried Chicken with Roasted Veggies

For dinner tonight, we popped some Chicken Thighs into our Deluxe Air Fryer and served them with Roasted Veggies. Jennifer chopped up Brussels Sprouts, Sweet Potatoes, an Onion and Bacon. She added Avocado Oil and lightly seasoned them. We roasted the veggies on our Large Bar Pan in the oven. Everything came out at the same time, it was nice and tasty.

Tortellini Alfredo with Meatballs

Dinner was a team effort tonight. Morgan made her famous Tortellini Alfredo, Sophie steamed the Peas and baked the Buttery Crescent Rolls, and I roasted some Teriyaki & Pineapple Chickens Meatballs in our Deluxe Air Fryer.

Veggie Pizza on Cauliflower Crust

OK. If you’ve never tried the Roasted Veggie Cauliflower Pizza from Costco, you are soooo missing out. The crust is crunchy, the veggies are sweet, and it is fantastic from the first time we made it. In fact, I start going through withdrawals if I don’t have it for too long. Baked in the oven, right on the rack in 12 minutes! Easy-peasy!
