Mediterranean Chicken & Rice Bowls

We made one of our favorite Pampered Chef recipes, Mediterranean Chicken & Rice Bowls. We made a few variations on the recipe. Jennifer preferred to dice the onion and cucumber with a knife instead of using our super tools like the Food Chopper and Quick Slice. We also didn’t have fresh parsley, so I added some sprinkles of dried parsley to the hummus and lemon juice, and it was very tasty. I also added a few handfuls of fresh spinach to the Quick Cooker after it looked like it needed more.

Rotisserie Roast with Tortellini

I bought a Beef Roast and cooked it in our Deluxe Air Fryer on Rotisserie Mode for 65 minutes, and it came out a perfect Medium Rare. Morgan made her famous Tortellini Alfredo to go with it and steamed some Broccoli. Great meal to end a busy week.

Beef Stroganoff over Linguini

Jennifer found a new recipe for Beef Stroganoff. We made it our own by using what we had in the house … Steak Fajita Meat, a bit of Red Wine, Fresh Mushrooms and Linguini. I really enjoyed it, but I think my favorite part was us working as a team to get the meal on the table.

Signature Spaghetti

Jennifer made her Signature Spaghetti for dinner tonight with thick noodles and ground turkey instead of beef.

Homemade Fish & Chips

Tonight, we tested another delight in our Pampered Chef Deluxe Air Fryer. I made perfectly crisp on the outside and soft in the inside Tilapia, and I tested out our Rotisserie Basket for Fries, which my family raved about! We paired them with some Steamed Broccoli, Macaroni Salad and Potato Salad. It was a thumps up even from my fish-a-phobic daughters.

Mini Corn Dogs with Mac ‘N Cheese

After a long, busy day at work, I came home to see Morgan making dinner. She made us Mini Corn Dogs, Mac ‘N Cheese and Mixed Vegetables. I little comfort to end the workweek!

Jambalaya Dinner

For dinner tonight I made Quick Cooker Jambalaya. What else would you make to celebrate Fat Tuesday? It was ready in 40 minutes.

Cheesy Cauliflower & Broccoli Chicken Soup

We tried our own take on a recipe Jennifer found online. One-Pot Cheesy Cauliflower & Broccoli Chicken turned into Cheesy Cauliflower & Broccoli Chicken Soup after a slight mixup of the quantity of certain ingredients. But, it was amazing with great flavor, and I think I prefer it as a soup! We made Red Lobster Cheddar Biscuits to go with it.
