It was leftover night, and I finished off the Squash. However, I forgot to take a shot before I started chowing down. Oh, well. I’ll have a better shot tomorrow.

Grilled Ham & Cheese, Asparagus and Soup
For dinner tonight, I tried my hand at making us Inside-Out Grilled Ham & Cheese, Bacon-Wrapped Asparagus with Roasted Red Pepper and Tomato Soup. It didn’t turn out like I had pictured it, but it was still tasty.
Shepherd’s Pie
My amazing family made Shepherd’s Pie for dinner, and it was ready just before I made it home from work. It was so good, I even had a second helping. Then, I finished the meal with my first slice of Pumpkin Pie of the season!
Roasted Chicken and Brussels Sprouts
For dinner tonight, I broke out my Half-Sheet Pan & Baking Rack Set again because the crispy chicken skin last time was so amazing, and it didn’t disappoint. I made Oven Roasted Chicken Thighs with Cherry Balsamic Brussels Sprouts and bacon. It was another success!
Chilly Day Chili
It was a snowy, blowy, chilly day here in Indiana, and we made a batch of our Quick Cooker Chili. It’s one Pampered Chef recipe that Jennifer asked for multiple times. If you would like this pressure cooker recipe, shoot me a note. I’d be happy to share it with you!
Costco Chicken Alfredo
Tonight, we had Costco’s pre-made Chicken Alfredo. It’s the one they made fresh today in the deli section. We just needed to heat it and eat it. We paired it with some amazing crusty rolls. Not bad for an easy dinner.
Garlic Butter Petite Filet Steak Sandwich
I ordered a Garlic Butter Petite Filet Steak Sandwich with Curly Fries. It was good, but I think I liked the Bacon & Steak Melt a touch better. I think it was the bacon.
Finishing Off Leftovers
I heated up the leftover Grilled Loaded Nachos, which were OK, but nowhere near as tasty we when they were fresh. Oh well, I didn’t waste them.
Creamy Pesto Chicken Pasta
If you think cooking chicken in the microwave can only come out rubbery, you haven’t used our Deep Covered Baker. I proved it tonight with my take on another Pampered Chef Recipe. Creamy Pesto Chicken Pasta was easy to make and only took about 30 minutes to prepare and cook. The covered stone keeps the juices in and doesn’t dry out the meat. We served the chicken and sauce over a bed of amazing Think Spaghetti.
Celebrating National Nachos Day
Ever since this morning when I noticed it was National Nachos Day, I’ve been fighting back my cravings all day long. I even skipped lunch to save it all for tonight, and I was absolutely thankful I did! I made my take on Pampered Chef’s Grill Loaded Nachos recipe. The original was vegetarian, but I added ground beef seasoned with Southwest Seasoning Mix. It was incredible! I had a huge plate full and washed it down with an icy Yuengling Light. Now, I feel like a tick ready to burst. I’m sooooo satisfied!
