Even when you are expecting it, the timing of someone’s death always comes as a surprise. Today, my wife lost her mother. To honor her, I made a meal that was one of her specialties when she lived with us.
I made Shepherd’s Pie. This recipe included ground beef browned with an onion and a couple cloves of garlic, a can of sweet corn, a can of green beans and a can of tomato soup. Don’t tell my family, but I added a packet of our new Enrichables with Kale & Fiber. Added nutrition with no change in taste. I think almost everyone went back for seconds!
Anyway, Costco didn’t have cans of plain tomato soup. So, I substituted it with Roasted Red Pepper and Tomato Soup. It may not have tasted exactly like hers, but it was my tribute to her.
I took my grand pup, Mushu, on my walk tonight, and he was a champ. No problems keeping up or even barking. I ended the day with 10,969 steps, which put me at 10/10 with 20 days to go!
