We had another meal planned for tonight, but then I found out while scrolling through Instagram today is Corn Chip Day! Ugh. After I had chips and Queso last night! Oh well, can you ever have enough chips? (OK. I know the real answer, but hang in there with me!)

I browned up some hamburger and added some taco seasoning. While it was simmering, I dumped a bunch of corn tortilla chips on my Rockcrok Grill Stone, added the taco meat and topped it off with shredded cheddar. After a few minutes in the oven to melt the cheese, and it was time to eat! These Nachos were even tastier than last night’s Chips and Queso. Maybe it was because it just felt great celebrating!

I served myself a plate and added some salsa and sour cream.

However, other family members had a harder time serving theirs. 🤣
