We tried another new recipe tonight, and it was a keeper!
Taco Lettuce Wraps
No packet taco seasoning here! Jennifer mixed the spices and even pressed the garlic before adding it to the diced onion and burger sautéed in coconut oil.
I was in charge of scrubbing and preparing the green onions, cherry tomatoes as well as shredding the cheddar cheese. We didn’t have the Boston lettuce the recipe called for, so I prepared romaine hearts in their place. For the ones that were extra small, I chopped them into a bowl in case anyone only wanted a taco salad instead of the taco wraps.

The wraps were very tasty and filling. However, they were messy. I think I had the juices nearly dripping down my elbow. Maybe the “normal” taco shell would’ve soaked up some of those juices.
Even though I felt like a slug hibernating inside from the snow, eating all those veggies made me feel like we celebrated National Sunday Supper Day successively.
