After a extra busy day filled with back-to-back meetings, I returned home exhausted. I was very thankful to have dinner already planned and blessed beyond belief that my wife was doing the cooking.
She modified a recipe we found for Pork Chops with Broccoli and added a couple other things to go with it.
Jennifer pan-fried the slightly seasoned bone-in pork chops in coconut oil and roasted the broccoli in the oven with a lemony blend of herbs and spices. We also served it with buttery Brussels sprouts and some au-gratin potatoes.
